The most simple sensational spaghetti dish

This recipe is so easy and can be adapted to suit the various appetites and ages you have to cater for.

Spaghetti with Tuna

Serves 4

250g best quality tuna. Preferbly in a glass jar and with something like Friends of the sea written on the label
A handful of capers, I use the ones kept in salt and rinsed well.
The juice of one lemon
Chill or peperoncino - optional
Olive oil
A handful of green or black olives,sliced

Bring a large saucepan of water to the boil , add a dessert spoon of salt and cook the spaghetti
According to the instructions on the packet.
When cooked drain in a colander . Turn the heat right down and pour in a glug of olive oil . Sprinkle in the chill if using and let the flavour develop. Add the flaked tuna, capers and olives, then mix it all well. Add the spaghetti and turn off the heat. Add the lemon juice last of all, the heat destroys the vitaminC. Give it all a good stir and serve in bowls. Pour over a drop more olive oil if liked.
