Today is the Festa della Repubblica Italiana. It is Monday so it feels like a Bank holiday. In Italy a Festa is taken on whichever day of the week it happens to fall. So it was a nice long weekend for us this year. The flags are flying and we had a festive family lunch inspired by the colours of the Italian flag.
Pasta fredda with cherry tomatoes, olives, basil and cheese
Melon, they are already delicious at the beginning of the season
Melanzane al forno, slice the melanzane and dip first in beaten egg and then in breadcrumbs. Put on an oiled baking tray and bake for about 30 minutes until golden brown.
Green salad
Strawberries with ricotta beaten with a little icing sugar
