Jacket potato party

For lunch today we had Jacket potatoes. There were various fillings to choose from on the menu. I asked for cheese, bacon and mushrooms, but got beans by mistake, someone else had avocado and prawn.

Sometimes we have a Jacket Potato party. It is a great fun quite economical way to have lots of friends round for a meal. The hardest part is buying and choosing the potatoes. They all have to be the same size and baking potatoes. Then all you have to do is scrub them really well under running water, pat them dry with kitchen towel, prick them all over with a fork and put them in the oven at 180 for one hour, or until soft inside.

While they are in cooking, lay the table and prepare as many fillings as you like, in bowls so everyone helps themselves.

Filling suggestions: tuna fish and mayonnaise, prawns in cocktail sauce, grated cheese, mushrooms, baked beans, ham, bacon, avocado, peperonata, Bolognese sauce, whatever you like.

Allow 2 potatoes each and also serve salad and tomatoes or coleslaw as a side dish.

My sister- in-law has wonderful Fajita parties, the same idea, lots of different fillings for Fajitas, sour cream and tomato salsa are essential here. Both great crowd pleasers if you all want to watch a football or Rugby match.
